Joe Danger is a cartoon-style motorbike stunt racing game akin to Excitebike and Trials HD. Players take control of daredevil Joe Danger as he makes his comeback after being out of commission for many years due to a terrible crash. He must continue through a career mode by completing many levels filled with obstacles. Each level features one or more unique objectives that can be fulfilled in separate sessions, such as finishing in a set amount of time, collecting all stars, coins, or the letters of DANGER, performing combos constantly, activating all targets, finding secret leads, or defeating all opponents. Completing these objectives earns you gold stars, which you can use to unlock further challenges. To progress, not all goals on all levels must be achieved. There are also some special stages where Joe must propel himself to knock over bowling pins, akin to a Flatout mode. Aftertouch can be used on a parachute or a cannonball while in the air.

The gameplay is reminiscent of an arcade game. Joe can duck and hop over obstacles and trigger boosts using separate buttons or keys. Ramps are utilized for jumping over automobiles or shark-infested pools, and while in the air, Joe can execute feats like supermans and cowboys, as well as several consecutive spins. Even though the emphasis is on speed, backtracking is allowed, and there are slower sections with launch pads and hidden places that introduce platform and exploration features. Joe can jump and double jump (when paired with boost) to go to higher ground. When a segment crashes, there are checkpoints to resume it. Performing stunts with wheelies fills the boost meter, allowing you to undertake more dangerous tricks while being cheered on by the crowd. There are also race sections where you can knock down other opponents.

Racing takes place in a single line through stages, with the ability to swerve into another lane at critical junctions, similar to LittleBigPlanet’s level architecture. Because items and objectives are frequently distributed throughout numerous racing paths, levels may need to be replayed multiple times to fulfill all dreams. There are also distinct sandbox levels where you can execute stunts without specific goals.

The game includes a built-in editor to create and share new courses with friends. Editing can also be done while Joe drives, such as dropping objects and adjusting the system. To complete the levels, the editor must sometimes be utilized in career mode to change or remove obstacles. Different game modes support multiplayer. Later, Xbox 360, PC, and PS Vita versions include new playable characters and 50 new levels in a new location called The Laboratory.
